1 Cup Margarine
1 Cup Brown Sugar
1 Tsp Vanilla
2 Cups Flour
1/2 Tsp Salt
2 Cups Rolled Oats
1 Tsp Baking Soda
1/4 Cup Boiling Water
2 Cups Chopped Dates
1 cup Water

Directions:
Directions:
In a pot, place 2 cups chopped dates, 1 cup water, and a pinch of salt.
Cook over medium heat until dates are soft and mixture is thick.
Cream margarine. Add sugar. Beat well. Stir in vanilla.
Add flour, oats, salt, and baking soda. Mix and add boiling water until mixture makes a stiff dough.
On a floured surface, roll dough thinly.
Cut 2 inch rounds.
Place on a ungreased cookie sheet.
Bake 10 minutes or until very light brown.
Let cool.
Spread date filling on brown side of cookie.
Place another cookie, brown side down, on filling.
Press together lightly.
Drizzle tops with thin vanilla or almond flavored icing.
Store in an airtight container.
