1 cup sugar
1 cup molasses
1 cup shortening
1/2 cup HOT water
2 teaspoons baking soda
flour
1 teaspoon vanilla
1/2 teaspoon salt
apple jelly

Directions:
Directions:
Beat together sugar, molasses & shortening. In separate bowl, combine water & baking soda. Stir until dissolved. Add to sugar mixture. Add vanilla & salt. Beat dough well. Add enough flour to make a stiff dough that can be rolled. Roll out thin on floured board or towel. Cut with a glass or round cookie cutter. Bake @ 325º for 7-10 minutes. When partly cooled, sandwich together 2 cookies with apple jelly. Store cookies in air-tight container. The first day these will be crisp but the second day they will become nice & chewy!
