2-1/2 c. flour
1 t. baking powder
a pinch of salt
1 stick soft butter
2 c. sugar
2 eggs
1 container whole ricotta cheese 15 oz
3 T. lemon juice
1 lemon, zested
Glaze:
1-1/2 c. powdered sugar
3 T. lemon juice
1 Lemon , zested
Directions:
Directions:
In medium bowl combine flour,baking powder,and salt. Set aside. In large bowl mix butter and sugar until light and fluffy. Add eggs, 1 at a time. Add the ricotta, lemon juice, and zest. Beat to combine. Stir in Dry ingredients. Line a cookie sheet w/ parchment paper. Spoon the dough onto the baking sheet. Bake for 15 minutes, until golden on edges. remove from oven and let cookies rest. Mix glaze, spread over cool cookies. Let glaze harden about 2 hrs. (if storing).
