35-40 saltine crackers
1 c. butter
1 c. brown sugar
1 tsp. pure vanilla
8 oz., about 1 1/3 c. chocolate chips

Directions:

Preheat oven to 400 F.
Line a large jelly roll pan or cookie sheet with aluminum foil. Spray aluminum with nonstick spray.
Arrange crackers, salt side down, in a single layer on aluminum.
In medium saucepan, combine butter and brown sugar and boil until it turns caramel color, 3-5 minutes.Add vanilla.
Remove from heat and pour over crackers, covering them evenly.
Bake 3-5 minutes or until just bubbly. Watch carefully not to scorch.
Remove from oven.
Sprinkle chocolate chips over crackers and allow chips to melt and become soft. Spread chocolate evenly over crackers with pastry knife or spatula.
Transfer pan to freezer for 15-20 minutes to cool completely and form one large sheet.
Break into bite size pieces.
Store in air tight container.
