1/4 cup unseasoned mashed potatoes
2 tbsp. milk
1 tsp. vanilla extract
1 pinch salt
1 16 oz. confection sugar
1 tbsp. confection sugar (to dust wax paper)
1/3 cup peanut butter

Directions:
Directions:
Combine mashed potatoes, milk, vanilla, and salt in a bowl; stir in the sugar to make a doughy consistency.
Refrigerate 1 hour.
Sprinkle 1 tbsp. of confectioners sugar on wax paper so dough doesn't stick.
Roll dough into a large rectangular shape.
Spread peanut butter on top of dough.
roll into a jelly roll shape.
Put into refrigerator for about 1 hour. Slice into pin wheels to serve.
