6 C. fresh fruit*
1 C. sugar
3 T. cornstarch
1/2 C. fruit juice*
2 T. lemon juice (omit in strawberry and raspberry)
food color (optional)
9-inch baked pie shell

*may use pears, peaches, strawberries, raspberries, blueberries and even grapes......blueberries are my favorite.

Mash enough berries or fruit to measure 1 cup.
Blend sugar and cornstarch in saucepan. Stir in juice and mashed fruit. Cook over medium heat, stirring constantly, until it thickens and comes to a boil (it takes about 8 minutes)Then stir and boil for at least a full minute...if you do not boil long enough the glaze will become cloudy when cooled.
Remove from heat. Stir in lemon juice and color. Let mixture cool.

Pour enough glaze on baked pie shell to spread and cover bottom and sides.
Fill with fruit. Pour remaining glaze over fruit to completely cover.
Refrigerate at least 3 hours before serving.

* Use pear nectar with pears and white/green grapes. Use orange juice with peaches, strawberries, raspberries and blueberries.

Use1 to 2 drops red food coloring with strawberries and raspberries. Use 4 drops yellow with pears, peaches and grapes. No food coloring needed for blueberries.

This is a very yummy way to take advantage of the wonderful fruits and berries we have available to us in season without totally baking or cooking them. Blueberry is my favorite, but peach and strawberry are just as nice if ripe and in season.
