1/2 c unsalted butter
1 1/4 c sugar
1/2 tsp salt
2 eggs
2 c flour
2 tsp baking powder
1/2 c buttermilk
1 pt blueberries
2 tsp white sugar

Directions:
Directions:
Preheat oven to 375º.

Cream together butter, 1 1/4 c sugar and salt. Beat eggs in. Mix in 1 3/4c flour and baking powder, alternating with buttermilk. Mix in blueberries remaining flour. Spoon into muffin tin, using liners or greased pan.

Bake 30 minutes.

Buttermilk substitute: use milk, just under 1 cup. Add 1 tbsp lemon juice or white vinegar. Let stand for about 5 minutes. Then use the amount called for the recipe.

Reyna and Taylor have a blast making this batter with Grandma Beach. It is often an overnight treat, where they make the batter at night and have the yummy muffins for breakfast the next day. It's also very easy to double the recipe and store batter in the freezer, to be pulled out later and muffins cooked.
