1 cup butter
1 1/2 cups sifted confectioners sugar
1 egg, unbeaten
1 tsp vanilla
2 1/2 cups sifted flour
1 tsp baking soda
1 tsp cream of tarter
1/4 tsp salt
2 squares unsweetened chocolate

Directions:
Directions:
Cream butter and confectioners sugar together by adding sugar gradually.

Beat egg and vanilla together

Sift flour, soda, cream of tarter, and salt together and blend into creamed mixture.

Melt chocolate and cool and then add to mixture.

Form in roll 2 inches in diameter. Wrap in waxed paper. Chill and slice 1/8 inch thick. Bake 8 minutes and cool.

VARIATIONS:
-Add finely chopped nuts to 1/2 the cookie mixture
-Melt additional chocolate and dip 1/2 cookie in
-For mint creams - make filling of 2 tbsp butter, 1 cup sifted confectioners sugar, 1 tbsp cream and mint flavouring to taste and spread between 2 cookies.
