Ingredients: ½ cup butter 1/3 cup unsweetened cocoa powder ¼ cup packed brown sugar ¼ cup milk 3 1/2 cups sifted icing sugar 1 teaspoon vanilla 30 vanilla caramels (unwrapped) 1 tablespoon water 2 cups unsalted peanuts (or other nuts) ½ cup semi-sweet chocolate pieces ½ cup milk chocolate pieces

Directions:Line a 9 X 9 X 2 inch or an 11 X 7 X 1 1/2 inch baking pan with foil that extends over the edges of the pan. Butter the foil. Set aside. In a large microwave safe bowl, microwave the butter on 100 % power for 1 to 1 1/2 minutes until melted. Stir in the cocoa powder, brown sugar, and milk. Microwave uncovered on high for 1 to 2 minutes until the mixture comes to a boil. Stir once. Then microwave for 30 seconds more and stir in icing sugar and vanilla until smooth. Spread mixture in the prepared pan. In a medium microwave safe bowl combine caramels and water. Microwave on medium heat for 2 1/2 to 3 minutes until the caramels are melted, stirring once. Stir in the nuts and microwave uncovered on medium heat for 45 to 60 seconds until the mixture is soft. Gently spread over the fudge layer in the pan. In a 2 cup microwave safe glass measure, combine the chocolate pieces. Microwave uncovered on medium heat for 2 to 3 minutes until the pieces are melted. Stir every 30 seconds. Spread over the peanut layer. Score while warm. Cover and chill for 2 to 3 hours. Use foil to lift the candy out of the pan. Cut into pieces and store in the refrigerator. Note: As power on microwaves vary the times given are estimates. Stir often to avoid hot spots. |
