Ingredients:

4 eggs yolks
3/4 cup sugar
4 cups whole milk
1 lemon peel - grated
2 - 3 tablespoons of unsalted butter
6 tablespoons Cornstarch diluted in hot water - used to thicken the filling
Add 3 teaspoons of vanilla after you remove from the heat

Meringue:
4 egg whites
2-3 tablespoons sugar
1/2 teaspoon baking powder
12 teaspoon cream of tarter

Directions:

Heat mixture on the stove and add cornstarch to thicken
Once thick remove from heat and add vanilla
Pour into prepare (pre-baked) pie shell


Whip meringue until think and fluffy. Cover top of pie. Place in oven until browned. Make sure you spread the meringue out to touch the crust of the pie - otherwise it will shrink.

This is a favorite of Rob's family - a tradition from the Italian side! They had this pie at all special occasions - along with ravioli, of course!!!
