½ pound of butter
1 ½ cup Asagio cheese (variations below)
2 cups flour
¾ tablespoons cracked black pepper (fine to medium grind)
Dash cayenne pepper
2 teaspoons milk

Directions:
Directions:
To make cookies, you can use several methods. Take about half the dough and roll into about a one inch diameter log on a lightly floured surface. Chill dough for about ½ hour or so and then slice into quarter inch cookies and place onto ungreased cookie sheet. Bake in the oven for approximately 12 minutes, until slightly browned on edges.

Another method for a more elegant cookie is to use a cookie press. This dough will be easier to work with at room temp if you use a cookie press. (Do not need to chill the dough). Make small cookies no more than 1 ½ inches wide, makes approximately 3 dozen cookies….bake about 12-13 minutes depending on size of cookie until lightly golden on the bottom.

The original recipe for these savory cookies was Grandma Christensen, called "Cheese Pennies" made with cheddar and rolled into a log and sliced into "pennies." They are perfect for a wine tasting party or for snacking anytime!!
VARIATIONS: you may use other types of cheese, particularly those with intense flavor. Avoid super soft or mild cheeses all by themselves, but you can combine with other cheeses like Parmesan to improve consistency, such as:

Asagio and other dry aged cheeses such as Parmesan Reggiano or Grana Padana, Romano, etc.
Sharp Cheddar, Pepper Jack
Crumbled Gorgonzola and Parmesan, or Roquefort and Parmesan
Aged Gouda
Also try: Cheddar and some caraway seeds or chives, Roquefort and ground nuts, etc.
