1/2 cup shortening
1/2 cup molasses
2 cups flour
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup sugar
1egg
1/2 teaspoon ground ginger

Lemon Icing

1/2 teaspoon lemon extract
1 cup powdered sugar
2 tablespoons milk

Beat until smooth

Measure shortening,sugar, molasses and egg into large bowl. Beat until light and fluffy. Stir in flour, baking soda, salt, ginger, and buttermilk alternately ( wet and dry) 1/3 at a time. Mix well after each addition.
Drop dough by teaspoons 2 inches apart on lightly greased,baking sheet.
Bake until almost no imprint remains when touched with finger - 10-12 minutes. Remove from cookie sheet and drizzle with icing while still warm.

Oven should be at 375º
