1 pound Ground beef
1/2 Onion, chopped
1 tsp. Minced garlic
Pinch of Salt and Pepper
1 - 2 cans (drained) of diced tomatoes
1 can (drained) of corn or 1 cup of frozen mixed vegetables
Instant mashed potatoes
Pinch of paprika, oregano and parsley

Directions:
Directions:
Preheat oven to 350ºF.

Brown ground beef with salt, pepper, onion and garlic in a frying pan, drain fat and place in the bottom of a large casserole dish.

Add corn or mixed vegetables, tomatoes, oregano and parsley and mix with beef in casserole dish.

Prepare 8 cups of instant mashed potatoes as stated on box and add to top of casserole mixture.

Cook for 1 hour or until bubbling.

Top potatoes with paprika.
