1 pound clarified butter
1/2 c. powdered sugar
2 egg yolks
5 c. flour

Cream butter for 15 minutes in large bowl of electric mixer. Cream until very light and fluffy. Sift sugar into butter gradually and cream together thoroughly. Add egg yolks one at a time and mix well. Remove from mixer and gradually work in enough flour to make a soft dough that is not too sticky to handle. Knead lightly. Pinch off pieces, roll in the palms of the hands until 3 inches long and 1 inch thick. Trim ends with knives. Place on unbuttered cookie sheet. Bake for about 15 minutes. Remove from oven and bury warm cookies in confectioner's sugar. Use spatula to remove cookies carefully from cookie sheet.

To clarify butter, melt ordinary butter over low heat. Pour melted butter in a bowl and refrigerate overnight. During refrigeration the butter will separate into two parts, a yellow solid and a white reside. Use yellow solid only, softened to room temperature.
