1 regular bag black beans - rinse and soak overnight. Keep soaking liquid.
2/3 cups olive oil
1 large onion, finely chopped
4 cloves garlic, finely chopped
1 green pepper medium, finely chopped
4 tsp. kosher salt
½ tsp. freshly ground black pepper
½ tsp. ground oregano
1 bay leaf
½ tsp. ground cumin
2 tbsp. white vinegar
½ tsp. ground coriander seed
2 - 3 tbsp. chopped fresh cilantro
3 tbsp. red wine
4 tbsp. olive oil

In a blender chop onion, garlic & green pepper add about ¼ cup of water to make sure that it is completed finely chopped.
Over medium heat, add 2 tbsp. olive oil in a pot and add all of the spices that you have finely chopped. Cook this for about 5 min.
Then add salt, oregano, cumin, and coriander. Cook this for about another 5 min.
Then add the black beans with one cup of water. Cook this for 10 min. Add 2/3 cups of olive oil, 1 bay leaf, salt, and 2 to 3 tbsp. chopped fresh cilantro, white vinegar, and 2 to 3 tbsp. of red wine.
Cover and cook for 40 minutes approximately.

If there is too much liquid, cook uncovered for about 15 to 20 minutes. Add 2 tbsp. of olive oil just before serving.

Serve over white or yellow rice.
