1 cup butter at room temperature
1 cup sugar
1 cup pumpkin puree (canned pumpkin)
1 egg lightly beaten
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. all spice
1 cup chopped peanuts
1 cup raisins
1/2 cup chocolate chips

1.) Preheat oven to 375º
2.) Cream together the butter and sugar.
3.) Add the pumpkin, egg, and vanilla and mix until well blended
4.) Sift together the flour, baking powder, baking soda, cinnamon, and allspice and add to the pumpkin mixture.
5.) Stir well to make a soft batter.
6.) Add peanuts, raisins, and chocolate chips
7.) Drop by rounded tsps. onto a cookie sheet and bake for 10-15 minutes.

Cool and Enjoy!

They lived together for 3 years, until Nick proposed and Jenna decided she should probably go live with her new husband-to-be. ;) Jen and her boyfriend Matt are both awesome cooks, and there was always something wonderfully new to try each week in their happy house!
