Ingredients: 1/2 cup graham cracker crumbs
two 8-oz. pkg cream cheese
5 eggs
2 1/2 T flour
1 cup sugar
2 T vanilla
1 pint half-and-half
* Toppings are optional

Directions: |
Directions:Butter 10" spring form pan and coat with graham cracker crumbs (about 1/2 cup). Place pan in freezer for about 30 minutes.
Place cream cheese in bowl. Separate 5 eggs. Add yolks to cream cheese, plus sprinkle in 2 1/2 T four, 1 cup sugar, 2 T vanilla. Mix slightly.
In saucepan , scald 1 pint half-and-half. Add slowly to cream cheese mix.
Beat egg whites until stiff -not dry. Fold into cream cheese mixture.
Pour into spring form pan. Place pan in broiler pan or sided cookie sheet adding 1/2" water.
Bake at 300 degrees for 1 1/2 hrs. or until 'springy' to the touch. |

Notes: Knowing that I only had a 10" spring form pan, Daddy played with recipes to come up with the perfect proportion of ingredients to fit that pan. I could have bought another pan, but he was just so proud to do this for me. I always use this recipe for family celebrations and gatherings. It has a lot of love in it.
