1 - full rack St. Louis style ribs
1 lb, medium to thin cut bacon

Directions:
Directions:
1) Wash, pat & dry the ribs. Remove the membrane. Remove every other bone from the rack of ribs,
creating a double cut of meat on each side of a single rib.

2) Apply a binder such as honey-mustard, and your favorite rub.

3) Wrap each rib with 2 pieces of bacon.

4) Place on smoker over drip pan with temp around 250 degrees

5) At 2 1/2 hours, sauce the ribs with your favorite BBQ sauce

6) At 3 hours, check internal temperature before removing, 160 degrees
