1 1/2 C flour
1/2 C dark brown sugar (packed)
1 tsp cinnamon
3 T cold butter
1 tsp baking soda
1 C boiling water
1/4 C dark corn syrup
3/4 C molasses (full flavor)
1/4 tsp salt
1 egg
1 (9 inch) unbaked pie crust

Preheat oven to 375º

Crumb Mixture:
1) In a food processor, combine flour, brown sugar, cinnamon, and butter...pulse several times until mixture is crumb-like...set aside...

2) place pie crust into 9" pie pan and form to pan...set aside...

Filling:
2) In a medium bowl, dissolve the baking soda in the boiling water...in a separate bowl combine corn syrup, molasses, salt and egg being sure to stir well...pour molasses mixture into water mixture and combine thoroughly...

3) Pour 1/3 of molasses mixture into unbaked pie crust...sprinkle 1/3 of the crumbs over mixture...continue this process until all of both mixtures are used and the top is covered with the crumb mixture...place in oven for 10 minutes...then lower oven temperature to 350º and cook for another 30-35 minutes until pie is set...it will still be a little wobbly when you remove from the oven...set aside and cool for at least an hour as the molasses mixture needs to set...

This is a traditional PA Dutch dish with molasses being the star...it is very sweet and rich...

You could use 1 cup molasses or even go to 50/50 with the table syrup...whichever you prefer...you could use mild molasses but the full flavored molasses (or even blackstrap) provide the best molasses flavor...

If no food processor, cut ingredients together with a pastry cutter (or two butter knives) or rub with fingers until dough forms fine crumbs...you can replace shortening for the butter but do not use margarine...

Ideal served with whipped cream or some vanilla ice cream...
