1 medium potato, cooked & cooled
powdered sugar
peanut butter

Directions:
Directions:
Cook potato, drain, then mash. Add powdered sugar till it gets like dough. Roll out on board. Spread with peanut butter. Roll up like a jelly roll. Cut into slices. Lay on plate to cool and it is very good.

Roll flat between 2 sheets of waxed paper. It is easy to roll into jelly roll.
