1 1/2 cups of butter, softened
2 cups of white sugar
4 eggs
1 tsp vanilla extract
5 cups of all-purpose flour
2 tsp baking powder
1 tsp salt
Seedless raspberry jam
Icing sugar

Directions:
Directions:
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Divide dough into two balls, cover with plastic flatten and chill at least one hour (or overnight).

Preheat oven to 400 º. Roll out dough on floured surface 1/4 to 1/2 inch thick. (Keep other disk and extra dough in fridge it gets soft fast and is hard to transfer from counter to baking sheet) Cut an even number of solid cookies with a cutter of your choice (I used a large star and a mini star last time) then cut half of those cookies with the smaller cutter to remove the centers. Place cookies 1 inch apart on ungreased cookie sheets.

Bake 6 to 8 minutes in preheated oven. Cool completely.

Spread even layer of raspberry jam on bottom layer of each cookie, and place a cookie with the middle cut out on top, so that you can see the pretty red jam peeking through.

Allow the cookies to sit overnight in an air-tight container so they get soft. Then sprinkle with icing sugar and enjoy!!

My mom and I always make these cookies at Christmas. We usually are up until the wee hours of the morning cutting, baking, cooling, jamming, sugaring these little gems. They get soft and chewy and amazing and they remind me of Christmas and family.
