6 c. sugar
2 c. cream
1/2 c. butter
1/4 tsp. soda
1 tsp. vanilla
4 c. pecans

Directions:
Directions:
Put 2 c. sugar into heavy iron skillet; place over low heat and stir with wooden spoon until sugar is entirely melted and light brown in color (about 1/2 hour). Put the rest of the sugar and the cream in a deep kettle over low heat and cook slowly while sugar in skillet is melting. When sugar is melted, pour in a thin stream into the cream and sugar mixture while stirring. Cook slowly to firm ball stage, (full boil or 234º) stirring constantly. Set candy off heat and add soda immediately; stir until mixture foams. Add butter and vanilla; stir until butter is melted. Let rest 10 minutes. Beat with wooden spoon until mixture has lost its glossy sheen. Add nuts; mix and pour into buttered (9 X 13-inch) pan. Cool: cut into squares. Store in airtight container. Note: make on a clear day and with a kitchen helper. (Granddaughter's Inglenook Cookbook)

Oklahoma Brown Candy or "Aunt Bill's" is part of the Schnaithman family holiday tradition. Mom would store this candy in decorative tins on the back porch---very convenient to help one's self whenever you wanted a piece of candy.
