Crust:
3/4 oats, toasted at 350 degrees for 5-10 minutes
3/4 c. cookie crumbs
1/4 c. butter
1/4 c. sugar

Filling:
3 Tbsp. flour
1 Tbsp. cornstarch
1/2 c. white sugar
1/4 tsp. salt
1/4 c. milk
2 egg yolks
2 c. milk

Crust:
Mix all ingredients, press in pie pan and bake 10 minutes at 350 deg. Let cool.

Filling for coconut pie:
Mix all ingredients in the order given, and cook in the microwave for about 8 minutes, or until thick, stirring every 2 minutes. Then add:
2 Tbsp. butter
1 tsp. vanilla
1 c. coconut
Pour filling in pie shell.

Filling for banana cream pie:
Exactly the same as for coconut cream pie, but don't add coconut. Add a layer of sliced bananas on top of crust the pour in filling.

You can make a meringue with the 2 egg whites or cover with whipped cream.
