"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
Dough:
2 cups lukewarm water
4 1/2 cups flour
1 1/2 tsp salt

Filling:
1 cup melted butter
2 cups sugar, with cinnamon mixed in
2 cups bread crumbs (fine dry - or half fine dry and half stale bread, cubed very small)
10 apples, peeled and diced
2 cups raisins

Directions:
Directions:
Dough: Work enough flour into water to make a stiff dough. Knead and beat and pound dough on table until it is like elastic. Cover dough and set it in warm spot (on top of oven) until very warm (about 2 hours).

While waiting for dough to warm, prepare table. Cover table with table cloth or sheet, pinning the corners so the cloth cannot move. Sprinkle the cloth with 1/2 cup flour.

When dough is warm, stretch it to cover the table (the size of Auntie's white one) by placing hands under the dough and carefully waving it up and down, working around and around the table continually.

When dough is fully stretched, brush on the melted butter, then spread the remaining ingredients over the dough. Cut off the heavy outside edges and roll like a cinnamon roll.

You can cook it in lengths, 3 side by side or roll it in a circle around a large pie or cake pan.

Bake at 350F for 30 to 35 minutes. When cooked, brush with cream.

Personal Notes:
Not sure how big Auntie's white table was, but I remember Gramma Dewey stretching hers on a round table, probably about 4 feet in diameter. Deb.
