1 1/2 cups water
3/4 cup uncooked rice (I use long grain/wild pilaf mix)
1 pound leftover pork roast, cubed, or 1 pound ground pork
1/4 cup chopped onions
1 small can mushroom pieces/stems
1 can cream of celery soup
1/4 cup mayonnaise
1/4 tsp. pepper
Salt
1/2 tsp. curry powder
10 oz. pkg. frozen broccoli cuts, thawed
Shoestring potatoes

Directions:
Directions:
Preheat oven to 350º, Place rice and water in a saucepan over medium-high heat and bring to a boil. Once the water is boiling, reduce heat to low, cover, and simmer according to directions.

If using ground pork, brown and add mushrooms and onions. Drain. Mix together pork mixtures or pork cubes, rice and broccoli. Stir in the cream of celery soup and mayonnaise, then season with pepper, salt, and curry powder. Transfer to casserole dish and cover with aluminum foil.

Bake for 45-50 minutes, until heated through. Remove the aluminum foil the last 5-10 minutes in the oven and sprinkle with shoestring potatoes for crunch.
