150 ml heavy cream
200 ml sugar
150 ml Swedish syrup
1 tbsp butter, unsalted
200 ml unsalted cashews, chopped coarsely
100 ml hazelnuts, chopped coarsely
100 ml walnuts, chopped coarsely

Directions:
Directions:
Mix cream, sugar and light syrup in microwave safe bowl with high sides. Microwave at full power about 10 minutes, stir occasionally and check for doneness by pouring a drop of the mixture into cold water. If you can roll it into a ball, it is done.

Add the butter and mix in the nuts.

Spread the mixture onto a cookie sheet lined with parchment paper and let harden. Break into smaller pieces and keep refrigerated.
