2c. Sifted Flour
1/2 tsp. Baking soda
1/2 tsp. Salt
1/2c. Soft butter or shortening
1/2 tsp. Vanilla extract
1c. Granulated sugar
1 Egg yolk
1/2c. Buttermilk (or 1/2c milk + 1/2 - 1 tsp. white vinegar)
1 Egg white

Directions:
Directions:
Preheat oven to 375º

1. Sift flour, baking soda and salt, set aside

2. Mix butter, sugar, and egg yolk until VERY Light and fluffy

3. Mix in flour mixture alternately with buttermilk, add vanilla

4. Beat egg white until stiff, fold into batter

5. Drop by rounded Tbsp. 3"apart onto greased cookie sheet

6. Flatten until 1/2" thick

7. Bake 20 minutes
