7 lbs pickling cucumbers, thinly sliced
2 c. pickling lime

6c white vinegar
7 1/2 c sugar
1 tsp cloves
1 tsp celery seeds
1 Tbsp pickling salt
1 Tbsp pickling spice

Mom's Lime Pickle's
Slice 7 lbs cucumbers thinly.
Soak 14 hours in 2c pickling lime in 2 gallons of water, use well water
or distilled water.

Be sure to rinse cucumbers well before soaking. Soak for 3 hours in cold
water.

6c white vinegar
7 1/2 c sugar
1 tsp cloves
1 tsp celery seeds
1 Tbsp pickling salt
1 Tbsp pickling spice
Mix above ingredients but do not heat. Soak pickles over night in
pickling brine.

Next morning, heat, boil slowly for 35 minutes. Fill sterilized jars with hot slices. Pour hot syrup over the slices, leaving 1/2 inch headspace. Place lid and ring on jar. Process pints for 10 minutes or quarts for 15 minutes in a boiling water bath canner.
Check jars for airtight seals once they have cooled completely. Store unsealed jars in the fridge.

My grandmother always sent a few jars of these pickles home with us whenever we came for a visit (which were too far and few between as we were a military family.) Grandma passed the recipe on to me and I've been making them for my own family for the past 22 years. Grandma Rose may have passed away years ago but her memory lives on in the recipes of our family!
