1 1/4 cups (2 -1/2 sticks) margarine, softened
3/4 cup finely packed brown sugar
1/2 cup sugar
1 egg
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
3 cups Quaker oats (quick or old fashioned,uncooked)

Directions:

Heat oven to 375º. Beat margarine and sugar until creamy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool one minute on cookie sheet; remove to wire rack.
