2 cups flour
1 teaspoon baking soda
3 cups finely shredded carrots
1/2 cup chopped nuts
1/2 cup raisins
2 cups sugar
1 teaspoon cinnamon
4 eggs
1/2 cup coconut
1 teaspoon baking powder
1 cup cooking oil
1 8 1/4 oz. can undrained, crushed pineapple
CREAM CHEESE FROSTING
2 3 oz, packages cream cheese
1/2 cup softened butter or margarine
2 teaspoons vanilla
4 1/2 - 4 3/4 cups powdered sugar

In a bowl, combine flour, sugar, baking soda, baking powder, and cinnamon. Add carrots, oil, pineapple, raisins, coconut, and eggs. Beat with an electric mixer until combined. Pour into 2 greased and floured 9 x 1 1/2 - inch round baking pans. Bake in a 350º oven for 30 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool on wire racks for 10 minutes. Remove cakes from pans. Cool thoroughly on racks.
CREAM CHEESE FROSTING RECIPE
In a bowl beat together cream cheese, margarine or butter, vanilla until light & fluffy. Gradually add 2 cups powdered sugar, beating well. Gradually beat in enough remaining powdered sugar to make frosting of spreading consistency.

Frost one cake top. Place other cake on top of first. Frost entire cake. Garnish with pecans or whatever.
Cover cake & store in refrigerator.
