1/2 cup hot water
1 1/2 Tbsp corn starch
1/4 cup sugar
2 Tbsp lemon juice
rind of 1/4 lemon
1 1/2 Tbsp butter

Directions:
Directions:
Combine corn starch and sugar. Add hot water slowly, stirring constantly. Add rind. Cook over hot water (double boiler) until thickens. Add lemon juice and butter. Grandma uses this on her Carrot Pudding. Another family favorite. You may want to make more than this at a time. I usually 3-4 times this recipe.
