1 c. butter softened
1/2 c. brown sugar
1/2 c. sugar

1 cup of oatmeal
2 1/2 cups flour
2 eggs
1 tsp. salt
2 tsp. vanilla
2 T. Peanut Butter (optional)
1 tsp. baking soda
Chocolate Chips (substitute/add butterscotch chips, mini reeses, mini Andes)

Directions:

Preheat oven to 350º

Grind the oatmeal into flour consistency (I use the coffee grinder).
Mix butter and sugars together with hand held blender until creamy in a larger bowl.

Add the rest of the ingredients (except the chips) mix together with hand held blender. Stir in chips. Place spoonfuls of about approximately. 1 T. onto baking sheet.
Bake for 10-12 minutes until lightly browned

I like my cookies warm and the chocolate melty to I only make a few at a time, usually around 4 in the afternoon with a cup of coffee, and save the batter until next time.
