1/2 c. butter
1/2 c. granulated sugar
1/3 c. packed brown sugar
1/2 c. peanut butter
1/2 t. vanilla
1 egg
1 c. all-purpose flour
1 t. baking soda
1/4 t. salt
1/2 c. rolled oats
1 c. semisweet chocolate chips

Directions:

1. Preheat oven to 350º.
2. In a medium bowl, cream together butter, granulated sugar, and brown sugar until smooth. Stir in the peanut butter, vanilla, and egg until well blended. Combine the flour, baking soda, and salt in a small bowl; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Roll tablespoonful of dough into a ball and place on parchment lined or lightly greased cookie sheet.
3. Bake for 10 to 12 minutes, until edges are slightly golden brown. Cool on cookie sheets for about 3 minutes before transferring to wire racks to cool completely.
