1 package lemon cake mix
3 medium eggs
⅓ c. oil
1 tsp. lemon extract
⅓ c. powdered sugar

Directions:
Directions:
Combine the cake mix, eggs, oil, and lemon extract in a large bowl. The mixture will be stiff. Powder both hands with powdered sugar and roll walnut-sized balls of the cake mixture in the sugar. Place dough on standard sized cookie sheet with 12 cookies per sheet.
Bake at 325º F for 9 minutes. Allow cookies to cool on cookie sheet for 3 minutes, as they will continue to cook, form, and brown slightly. Finish cooling on wire rack and serve.
