2 c. flour less 2 T.
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening
1 1/2 c. sugar
2/3 c. sour milk (add 1 tsp. lemon juice to make sour)
2 eggs
3 ripe bananas
Nuts

FROSTING:
8 oz. Cream cheese softened
1/2 butter softened
1 tsp. Vanilla
2-4 Tblsp. Heavy cream
2- C. Powered sugar

Or use this Frosting if no cream cheese
1/3 c. melted margarine
1 tsp. butter flavoring
1 tsp. vanilla
2 1/2-3 c. powdered sugar

Directions:
Sift together first 4 ingredients. Put lemon juice in milk, then mash bananas with a fork in a separate bowl. Cream sugar, shortening thoroughly, add eggs 1 at a time mix until all's incorporated. Add flour mixture alternating with milk, then add bananas, 3/4 c. chopped walnuts (optional). Bake 350º 30-35 minutes (or until toothpick comes out clean).

FROSTING:
8 oz cream cheese softened
1/2 c. Butter softened
Beat with electric mixer whisk/or beaters
Add 1 tsp. Vanilla continue mixing with mixture.
2- C. Sifted powdered sugar
2-4 Tblsp heavy cream (I used 2 Tblsp.)
Depending on humidity may need extra powered sugar and or cream. Mix until smooth, spread over cake. Top with chopped walnuts.
Or use this frosting if no cream cheese available.
Melt margarine, add flavorings, then powdered sugar, a cup at a time. Mix until desired consistency; add milk if too stiff. Spread on cooled cake.
