1 lb soldier beans
1/2 large onion sliced
1 1/2 tsp dried ground mustard
1 tsp salt
pepper to taste
1 pkg salt pork - cubed
3/4 C. Molasses
2 C. Vermont Maple syrup
water to cover beans

Directions:
Directions:
Soak your beans over night. Boil for about 45 minutes. Drain the beans and place into a pressure cooker. Add the mustard, salt molasses, pepper, maple and onion. Cover with water. cook for 1 hour and a 1/2 in the pressure cooker. Release steam and check for tenderness. If beans are not tender replace cover and cook another 15 minutes.

I like to have a mixture of beans sometimes, and will make a 3 bean baked beans by cooking equal amounts of soldier, black, and pinto beans. If sauce is too thin allow beans to cool and later cook down sauce again. this will allow the natural starches to thicken for you. Feel free to add some brown sugar and garlic too if you would like.
