1 1/2 c. boiling water
1 c. oatmeal
1/2 c. melted butter
1 c. packed brown sugar
1 c. white sugar
2 eggs
1 1/2 c. flour
1 tsp. soda
1 tsp. vanilla
1/4 tsp
pinch salt
TOPPING:
1 stick butter
1 c. packed brown sugar
1/2 c. cream
1 c. coconut
1 tsp. vanilla
1/2 c. chopped walnuts.

Directions:
Directions:
Pour 1 1/2 c. boiling water over 1 c. oatmeal and let stand for 20 minutes. In a large mixing bowl, beat well; 1/2 c. melted butter, 1 c. packed brown sugar, 1 c. white sugar, 2 eggs. Then add; 1 1/2 c. flour, 1 tsp. soda, 1 tsp. vanilla, 1/4 tsp. salt and the oatmeal. Mix together and pour into a greased and floured 9x13 cake pan. Bake at 350º for 30-45 minutes. While the cake is baking make the topping: In a sauce pan bring to boil; 1 stick butter, 1 c. packed brown sugar, 1/2 c. cream. Boil for 8-10 minutes. Then add 1 c. coconut, 1 tsp. vanilla, and 1/2 c. chopped walnuts. Spread on cake as soon as it comes out of the oven.

Grandma used to make a big batch of oatmeal for breakfast so she would have enough left over to make this delicious treat for us.
