1/4 cup sugar
1/2 teaspoon salt
1 cup flour (do not sift)
2 cups milk

Beat first three items together thoroughly. Alternate flour and milk addition ending with milk until batter is thin and smooth. Let batter rest for at least 30 minutes…longer is better.
Fry with extreme care* in well buttered frying pan (*temperature must be just right). This will require at least three test pancakes and lots of swearing..preferably in Swedish. Butter and then batter must be swirled quickly with proper wrist action to cover the bottom of the pan completely. Pancake must be turned at the proper moment when bubbles appear. If turned too soon it will tear. If turned too late it will be burned leading to more swearing. A flexible spatula is required and don’t hesitate to use your fingers to spread the pancake out after turning, but please maintain aseptic technique by not licking them first. For the final removal, double pancake on itself and then once again to create a folded 1/4 pancake. Stack them up on a plate over steaming water to keep them warm and to create a buffer stock before they disappear and you cannot possibly keep up with the demand.
These are best served with berries and whipped cream (or yogurt for the health conscious) and rolled into a thin cylinder/tube using a fork. They are also extremely good with pure maple syrup. Be creative.
