6 slices bacon
1 cup chopped onions
2 cups potatoes, cubed
1 can chicken broth
1 tsp. salt
1 stick butter, melted
2 cups half and half
2 or 3 Tbsp. flour
Parsley to garnish

Directions:
Directions:
Cook bacon until crispy. Set aside. Reserve 3 Tbsp. of bacon fat. Brown the chopped onions in the reserved bacon fat until soft, about 5 minutes. Add the potatoes and chicken broth. Cook covered until all potatoes are tender. Add salt.

Next, melt butter in frying pan. Add 2 to 3 Tbsp. flour, mix well over low to med. heat to create a sauce mixture. Then add this to soup mixture, along with the half and half.

Garnish with bacon and parsley.
