1 3/4 cups all-purpose flour
1 3/4 tsp. pumpkin pie spice
1/'2 tsp. salt
12 tsp. baking soda
1/4 cup butter, softened
1 8 oz. pkg. fat-free cream cheese
3/4 cup Splenda© Brown sugar blend
1/2 cup egg substitute
1 tsp. vanilla extract
3 cups uncooked regular oats
1 cup raisins
1 cup carrots, grated

P:reheat oven to 350º.
Combine flour, spice, salt and baking soda in small bowl.
Beat butter, cream cheese and sugar at medium speed until fluffy. Add egg substitute and vanilla, beating until blended. Gradually add flour mixture, beating on low speed just until blended. Stir in oats, raisins and carrots.
Drop by rounded tablespoonfuls onto baking sheet coated with cooking spray or parchment paper. Gently flatten dough into circles.
Bake in batches for approximately 20 minutes or until wooden pick inserted in center comes out clean. Remove to rack and cool.

Other options: Add a small can of crushed pineapple, drained and/or chopped nuts.
