These are the items you should "have on hand" and keep making them all week, if you want, for a great snack!!

Corn Tortillas
Diced Onions
Sliced Black Olives
Grated Cheese
Red or Green Enchilada Sauce
Shredded chicken, beef, fish (optional)
Sour Cream (optional)



Directions:
Directions:
When you're ready for your snack:
Take two corn tortillas and zap in the microwave for 20 seconds. Remove and put on a large dinner plate "flat". Add shredded chicken, grated cheese, diced onions & black olives, and one tsp. sauce in each one. Roll one side over the other and turn over so that the folded sides are down.
Cover with 3 tbs. of enchilada sauce. Top with more cheese and diced onions. Zap for one minute. Top with a dollop of sour cream.
