5# Steak sliced into thin strips (New York or Chuck Steak)
2 onions (large) sliced half moons
1T minced ginger
1T minced garlic
2T vegetable Oil
Salt & Pepper
3T shoyu
1/2 C white wine
Beef drippings
2T corn starch
3T oyster sauce

Directions:
Directions:
Season sliced steak with salt and pepper and brown meat on high heat with vegetable oil. This should take no longer than 4-­5 minutes. It may be necessary to brown half the meat at a time to get nice color. Take meat out of pan and set aside.

Deglaze the pan with white wine and reduce by half. Reserve the liquid on side for later use. Add any beef drippings that may have come out of the browned beef. Heat pan back on medium high heat with vegetable oil and sauté the ginger and garlic until aroma is apparent.

Add onions and cook until browned but not soft. While onions are browning add Shoyu to wine and beef dripping mixture and stir in the cornstarch until dissolved. Next add the oyster sauce to the liquid and pour evenly in pan over the onions. Stir the mix very well and wait until the sauce thickens and coats the sautéed onions.
Add the browned meat back to the pan and stir until hot again. Taste and re-­season with salt and pepper if needed. Turn off the heat, garnish with green onion and serve with fresh steamed rice.
