2 cakes or 2 pkg. yeast
1/4 c. lukewarm water
1 1/2 c. milk, scalded
1/4 c. shortening
1/2 c. sugar
2 tsp. salt
2 eggs, beaten
5-6 1/2 c. flour

Directions:
Directions:
In a small bowl, combine the yeast and warm water. Set in a warm place.
In a large bowl, stir together the milk, shortening, sugar and salt. When mixture becomes lukewarm, add the softened yeast.
Then add 2 beaten eggs and 2 1/2 c. flour and beat till smooth. Add another 2 1/2-3 1/2 c. flour to the dough; stir thoroughly. Cover the dough and let rest 10 minutes.
Turn on floured board and knead until smooth. Place in a greased bowl and brush with melted fat, cover and rise until double in size (about 1-1 1/2 hours). Punch down and let rise again (about 45 minutes).

Donuts or long johns: Roll out to 1/2" thick (5" long for long johns). Cut donuts with form.

Bismarks: Roll out to 1/4" thick; cut into 2 1/2" rounds. Place 1 tsp. jelly in center of round and moisten edges and top with another round and pinch edges together.

Let rise uncovered 20-30 minutes. Fry in deep fat, heated to 365º F. Turn when underside is brown (1-2 minutes). Drain on paper towels. Toss in bag with sugar, or frost when cooled.
