Cookie Dough:
4 lbs. white flour
6 tsp. baking powder
3 tsp. baking soda
2 lbs. granulated sugar (4-1/2 cups)
3 tsp. ground cloves
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 c. powdered cocoa
1 lb. chopped raisins
1 lb. shortening (melted and cooled)
1 lb. chopped nuts
1 tsp. salt
1 large jar of applesauce
2 tsp. vanilla extract
8-10 c. cooled coffee

Frosting:
2 lb. box confectioner's sugar
6 tbsp. softened butter
Milk as needed

Cookie Dough:
Preheat Oven to 350º
Combine all dry ingredients. Add applesauce, shortening, coffee and vanilla until all ingredients are incorporated. Add the chopped nuts and raisins. Using a teaspoon, scoop up batter and form it into balls the size of a small meatball. Place onto a greased cookie sheet. Bake 7-8 minutes or until toothpick comes out clean, but cookies are somewhat soft. Put glaze on while still warm.

Glaze:
Stir together confectioner's sugar, butter & enough milk to create a thin frosting.
