3 1/2 lbs. sugar
1 qt. cream (1pt half & half to 1 pt.whipping cream) 3/8 tsp. cream of tartar
vanilla
nuts (optional)

Directions:
Directions:
Put sugar and cream in a heavy kettle over a slow fire. When mixture comes to a boil, add cream of tartar. Stir constantly but gently till it reaches 238º. Set aside to cool. Put in a bowl and work with hand till it usually comes off the hands.
Cover with a damp cloth and leave till ready to make bars. Form bars into like a small log.
Let set till they can be handled to coat.
Lavern uses almond bark and wax. I always use chocolate & wax. Then coat with chocolate and a little wax that is melted over hot water in double boiler.
