2 1/2 lb sesame seeds,
1 lb almonds,
4 cups sugar,
1 lb good honey, preferably Sicilian,

Toast the sesame seeds and almonds in oven by spreading them separately in a shallow pans and placing the pan in the center of a 400 degree oven.
Toast them at separate times as the almonds will toast at a different rate than the seeds.
Watch them! because they both will toast within 2-3 minutes!
Melt the sugar in a large saucepan on very low heat. WATCH FOR FLAMES! When sugar is melted add honey slowly, stirring constantly.
Mix nuts and sesame seed into the saucepan and mix well.
Let cool.
Pour mixture onto a wooden pastry board that has been sprayed with a non-stick spray.
Spread evenly and sprinkle with candy sprinkles.
Quickly before the candy hardens; Cut into rectangle pieces and store in an airtight container.
