2 sticks butter
2 eggs
2-1/4 cups flour
1 tsp salt
1 tsp baking soda
2 cups oatmeal
1 cup sugar
1 cup light brown sugar
1 tsp vanilla
12 oz semi-sweet chocolate chips
1 cup chopped pecans
1/2 cup coconut (optional)

Directions:
Directions:
Cream butter and both sugars. Add eggs and vanilla and mix thoroughly. Using a food processor, process oatmeal until smooth. Add flour, salt, and soda to oatmeal. Slowly add flour mixture to butter/sugar. Stir in pecans and coconut. Drop by spoonful onto ungreased cookie sheet. Bake for 10 minutes at 325º.

I made these cookies one time when Grandmother came to Mom's for supper. She loved them so much, she called me in Lubbock for the recipe so she could make them for Eddie.
