2 cups sugar
1 tsp. baking soda
1 cup buttermilk
3/4 cup butter or margarine
1 tsp. vanilla
2 cups chopped pecans

Directions:
Directions:
In a microwaveable container 3 times the amount of ingredients or it will boil over. Combine sugar, soda, buttermilk and butter. Cover with plastic wrap; punch holes in wrap. Microwave for 2 1/2 minutes, stir and turn dish. Continue cooking for 15 minutes, stirring every 5 minutes. Return to oven for 2 minutes or until soft-ball stage (230º on the candy thermometer--do not put thermometer in microwave) forms in cold water. (Sometimes it is not necessary to cook it the last 2 minutes. Check the temperature before returning it for the last 2 minutes.) Add vanilla and beat with electric mixer until soft peaks. Watch closely. Stir in pecans and spread in buttered 7"x12" inch dish. Cool and cut into pieces.
