Any type of chicken pieces cut up and easy to handle
4 eggs
1-2 cups seasoned bread crumbs (Italian, Spicy etc)
Salt and pepper to taste
Butter or margarine

Tools: Pie pan, 8x8 baking pan for small amount of chicken and for large amount use a 9 x 13 inch pan, and 2 dinner plates
Preheat oven to 350°F
Remove thawed chicken from package, rinse off with cold water and pat dry and place on a plate. Break eggs in the pie pan, add a bit of milk and beat, then salt and pepper to taste. On another clean plate pour out the bread crumbs. Next to the bread crumb plate place your greased 9 x 13 or 8 x8 baking pan. Have the pans lined up: chicken, egg mixture, bread crumbs and baking pan. Take the chicken and dip in the egg when covered on both sides dip in the bread crumbs on both sides and place in the pan. When all the chicken has been coated dab a ½ slice of butter on each piece of chicken. Pour either ½ cup of chicken broth or white wine or water at the bottom of the pan. Cover with foil then place in oven and cook for 25-30 minutes with the cover on and 10-15 minutes with it off. Serve hot.
