6 medium potatoes, peeled
1 small onion, grated
3 eggs
3/4 cup flour
2 teaspoons salt
Oil for frying

Directions:
Directions:
Grate potatoes coarsely into a bowl filled with cold water. This keeps the potatoes from turning dark and removes some of the excess starch making the pancakes more crisp. In another bowl combine the onion, eggs, flour and salt. Drain potatoes, pressing out all liquid. Beat potatoes into batter. Heat oil. Spoon heaping tablespoons of batter into oil, spreading batter with back of spoon into 4 inch rounds. Brown on one side; flip over and brown on other side. Brown the pancakes slowly so potatoes will have a chance to cook through properly. Drain on absorbent paper. Serve hot with applesauce.
